Pizza, Calzone & Focaccia Recipe


Pizza is Life! I have been making pizza for many years, and have had a longtime recipe I developed for creating the dough.

This dough base is amazing for making Pizza, Focaccia, and Calzone. Th ingredients are basic, and you can make the dough the either the night before, a few hours before, or just before baking the pizza. Since pizza is so thin, it does not need to rise much, particularly if you like it flat and crispy.

Dough Ingredients:

  • 2 spoons dry yeast

  • 2 spoons sugar

  • 4 cups of flour

  • 2 cups of lukewarm water

  • 4 spoons of olive oil

  • 2 spoons of salt

Sauce Ingredients:

  • 1 can of crushed Tomatoes

  • 4 cloves of crushed Garlic

  • 2 spoons of Oregano

  • 1 spoon of Salt

  • 1 spoon of Pepper

  • 2 spoons olive oil

Dough preparation stage:

I use a mixer to kneed the dough, and do everything in the mixer bowl.

Start by activating the dry yeast with the sugar and the water. Throw in the flour, and start the mixer on low speed until the dough is formed well, normally 3-4 minutes. Add flour/water if needed to make the dough a bit more solid/flowing. Add the salt and olive oil at this stage, and kneed for another minute. At this stage, the dough should be elastic, and should not stick to your hand when you touch it. Take the dough out and place in a bowl to allow it to rise.

Sauce preparation stage:

Mix the Tomatoes, Garlic, Oregano, Salt, Pepper and Olive oil together. That's it!

Build your pizza, calzone and focaccia the way you like it.

Preheat oven for at leat 30 minutes, to the maximum temperature available.

Take a ball of dough roughly 100 gr, and dust well with salt. Use a rolling pin to form the base, and place your toppings and cheese.

Bake in oven until ready to your liking!
