Easy Potato Gnocchi
This is a family traditional favorite recipe for Gnocchi. All you need for this recipe is: 1Kg of boiled potatoes, 1-2 cups of flour (I use white), 2 Eggs.
First you mash the potatoes, let it cool down a bit to handle by hand, and mix with the flour and eggs.
Next, you kneed the dough, and roll into a 2 cm wide snake. Cut the snake every 3-4 cm and flour.
Now it is up to you to make your favorite Sauce, spiciness, and saltiness. My favorite is Tomato & Basil based, and has to include meat of some sort, along with a cup of red wine for taste. This one has meat balls.
Now that the Sauce is ready, it is time to boil the Gnocchi. In order to cook the Gnocchi, you need a pot of boiling water, put some oil in it to allow better separation of the Gnocchi, and then you throw the Gnocchi in one by one and wait for them to float. I scoop them up as soon as they float in batches, and then throw in the next batch. It take approximately one minute for them to be ready. Hope you enjoyed this easy recipe, Bon Appetite!
